Ingredients

For the Steak & Vegetables

  • 1 beef chuck steak (about 1 pound)
  • 2 teaspoons Mediterranean spice mix
  • 2 zucchini, sliced lengthwise
  • 8 baby sweet bell peppers
  • 1 teaspoon olive oil
  • Salt, to taste

Balsamic Marinade

  • 2/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 1 tablespoon Mediterranean spice mix

Instructions

1. Marinate the Steak

In a small bowl, whisk together the balsamic vinegar, olive oil, and Mediterranean spice mix.

Place the chuck steak in a food-safe resealable bag or shallow dish. Pour the marinade over the steak and coat evenly.

Refrigerate for at least 6 hours or overnight, turning occasionally for maximum flavor.

2. Prepare the Vegetables

Preheat grill to medium heat.

In a medium bowl, toss zucchini and sweet bell peppers with olive oil until lightly coated.

Place vegetables directly on the grill grates and cook:

  • Zucchini: 3–5 minutes per side
  • Bell peppers: 3–5 minutes total, turning occasionally

Remove vegetables from grill. Once slightly cooled, slice zucchini into 1/4-inch strips.

3. Grill the Chuck Steak

Remove steak from marinade and discard remaining marinade.

Season both sides of the steak with Mediterranean spice mix.

Grill over medium heat for:

  • 3–4 minutes per side for medium-rare (145°F)
  • 4–5 minutes per side for medium (160°F)

Turn occasionally for even cooking.

4. Rest & Serve

Transfer steak to a cutting board and let rest for 5 minutes before slicing.

Season lightly with salt if desired.

Serve warm alongside grilled zucchini and sweet peppers.
